End of the summer harvest

We are coming towards the end of our summer harvest with the abundance of tomatoes and onions.

We are now working on our processing to make a tomato, onion and chilli chutney. ​

Tomato, onion and chilli chutney

Ingredients:

• 4 garlic gloves
• 4 red chillies
• fresh ginger
• 500g tomatoes
• 250g onions
• 250g brown sugar
• 150ml cider vinegar
• 1 tsp mustard seeds
• 1 tsp coriander seeds​

Method:

1. Chop onions, tomatoes, garlic, chillies and ginger
2. Put all in a saucepan with sugar, cider vinegar and spices and bring to boil, then simmer for 30 minutes. Pour into sterilised jars with fitted lids (e.g. Kilner jars or Ikea equivalent)
3. Chutney should last for 6 to 12 months and should be refrigerated once opened.
4. Use chutney as you normally would. Can be amazing in a sandwich of warm fresh bread and a strong, creamy blue cheese.
